Students will prepare and present a poster on a commercial food product of their choice. Posters should be created in Microsoft PowerPoint.
If they were printed, the posters would be A2 sized. To create an A2 poster you must adapt a poer point slide as follows – under the ‘design’ tab in PowerPoint, click ‘slide size’ and then ‘custom slide size’. Set the slide size to 42.0cm width and 59.4cm height, also click ‘portrait’. Font must be no smaller than 12 point (large enough to be readable 1m from a printed version of the poster).
References may be numbered (to allow more space for text) in the Vancouver style but full references but be included on the bottom of the poster (this is the only time font may be smaller (8-12 point), and must be readable).
Students will be expected to deconstruct the label, demonstrating; as appropriate to the product of their choice; the ability to:
Link the list of ingredients to the nutritional information (which ingredients contribute to each macronutrient).
Relate the ingredients to their functionality in terms of food structure, texture, sensory properties and health.
Describe the food processing technique used to prepare the food and discuss their impacts on food quality.
Comment on any nutrition and/or health claims in the context of the relevant regulation.
Recognise and demonstrate an understanding of different logos (for example, fair trade, red tractor, organic, 1 of 5 a day…) being critical of their conditions for award.
Explain the principles behind and critique, the experimental determination of nutrient contents and energy calculation.
Marks will also be awarded for creativity and presentation of your poster.
Citing lectures is not usually appropriate – you must look at the original source material.
References should reflect current thinking in the area of food science/nutrition.
Books may be valuable for initial reading but these should not be cited extensively in your paper.
You must include an appropriately structured list of references. Normally we follow APA 7 but to allow more space for text, we will allow you to use numbering on the poster (instead of author name) and APA 7 style in the reference list
