HOSP 1145 Introductory Food Management
Task
For this entry you will write a draft essay of at least 700 words describing the social world the restaurant is seeking to create and the way in which customers react to it. In writing this essay, you have to boil down everything you observed into a clear argument, complete with a thesis statement summarizing your point and supporting paragraphs that explain that thesis in greater detail.
You will also need to provide evidence of your claims in the form of ethnographic observations. I am more interested in your descriptions of how people behave than I am in your assumptions about why they behave that way. Feel free to express your own personal experiences about how the food looked and tasted, but be careful in trying to interpret the intentions of others. Be modest in your goals. In trying to summarize a complete social world, even one taking place within the boundaries of a restaurant, you can’t possibly describe everything you see and taste.
You can’t even include all of your research notes. It is important for you to pick and choose your descriptive evidence to focus on the points that best convey your thesis. Of all the many things you observed in the restaurant, which ones most clearly demonstrate the world that the restaurant is seeking to evoke and the experience of different people within it. By the same token, there are many different possible reactions to this world by yourself and by other customers.
You will be able to discuss only a few and ideally focus on one or two, for example, cultural insiders and outsiders. Throughout the assignment, focus on your empirical description of what you actually see, hear, and taste. Let your ethnographic description do the work.
