Aligned subject learning outcomes critically evaluate multidisciplinary perspectives of hospitality and gastronomy synthesise subject concepts in the provision, consumption and management of hospitality and gastronomy experiences compare and contrast hospitality and gastronomy practices across different cultures to design sustainable and effective experiences.
The aim of this two-fold assessment is to provide students with an opportunity to demonstrate advanced and integrated conceptual knowledge of gastronomy in relation to hospitality and tourism through critical analysis and interpretation of economic, socio-cultural and environmental impacts of gastronomy using contemporary literature. The first part is an annotated bibliography (20%), which aims to encourage students to search, read and appraise related literature for their chosen topic. The annotated bibliography should be submitted one week before the essay is due, with the assumption that the references for the essay have been finalized by this time.
Instructions:
You are required to choose and appraise a specific gastronomy or food-related phenomenon or issue through the lens of sustainability. More specifically, you are required to critically analyze the origins, development and current state of the chosen phenomenon/issue in terms of economic, socio-cultural and environmental impacts. The chosen topic must have links to hospitality and/or tourism contexts.
Annotated Bibliography - You are expected to review a minimum of 12 related literature for your chosen topic. An annotated bibliography is a list of citations of published literature where each citation is followed by a brief annotation of about 130 words. The annotation describes the contents and purpose of the book or article and should inform the reader of its relevance, accuracy, and quality. An annotated bibliography has three main functions:
1. Excellent preparation for research
2. Provides the author of the bibliography the opportunity to learn about a specific topic
3. Offers others in a specialized field comprehensive and current information about related sources.
Your essay should be 1.5-line spaced with justified alignment. A title page and table of contents are expected, and headings /titles are encouraged to lead the reader through the researched essay. The word limit for the researched essay is 2250 words.

It is highly recommended that you start thinking about your topic sooner and prepare an outline with a list of potential references by Week 2 or 3. APA Referencing is expected, and plagiarism will not be tolerated. At least 12 academic references are highly recommended for an essay of this length.The criteria sheet for marking of the annotated bibliography and essay are attached to this outline. It details the expectations of submission, so please read it carefully.
Summaries and evaluations of sources are complete and thorough (for word requirement). The summaries give a good impression of what information was given by each source. The evaluations supply the reader with information regarding the usefulness, audience and reliability of source and also compares source to others on these factors.Sources are cited correctly according to APA conventions. Student followed directions in regard to the types of sources. Very few grammar/punctuation errors and annotations are clear and organized (ideas flow easily and clear introduction sentences are present).The introduction to the essay contains clear aims and objectives, and key concepts are identified, and their relationships are clearly explained.
